Adobong Kangkong (water spinach)

Ingredients
1 big bowl of Kangkong (water spinach)
2 tbsp oil of your choosing ( I use avocado oil)
1/4 kg of pork
1/4 cup of coconut vinegar
1/4 cup of soy sauce
5 gloves of garlic, minced
1 onion, diced
2 laurel leaves (bay leaves)
1 pork knorr cube or 1/2 cube link
1 cup of water
salt and pepper to taste
Method
Heat oil then saute garlic and onion in a big pan then add pork. Allow the pork to brown and oil for a few minutes.
Add water, pork cubes, bay leaves, soy sauce, some salt, pepper and bring to a boil.
Add the vinegar then let it simmer for 5 minutes.
Add the kangkong stalks first and cook for a minute or two (2) then add kangkong leaves.
Continue cooking until it is done.
Serve with cooked white rice and enjoy!
